Ingredients You’ll Need

  • 2 ½ cups mixed nuts (pecans, almonds, cashews, walnuts—your choice!)
  • ½ teaspoon ground cinnamon
  • 3 tablespoons pure maple syrup
  • 1 tablespoon coconut sugar
  • 1 teaspoon Vanilla Bean Project Vanilla Bean Paste

 

Step-by-Step Instructions

  1. Preheat the oven to 325°F. Line a large baking sheet with parchment paper or greased foil.
  2. Mix the dry ingredients. Add nuts, cinnamon, and a pinch of salt to a large bowl. Stir to coat.
  3. Sweeten the deal. Add maple syrup, coconut sugar, and vanilla. Stir until the nuts are fully coated.
  4. Spread & bake. Pour nuts onto the prepared baking sheet, spreading them in an even layer with little gaps to help air circulate.
  5. Bake & flip. Bake for 15 minutes, then use a heatproof spatula to flip the nuts. Bake another 6–12 minutes, keeping a close eye to prevent burning.
  6. Cool & enjoy. Remove from the oven and let cool on a rack for 30 minutes. The glaze will crisp as it cools, giving you that perfect candied crunch.

Tips for Perfect Candied Nuts

Watch closely at the end—nuts can go from golden to burnt in minutes.
Mix it up—try adding pumpkin pie spice, a pinch of cayenne, or even flaky sea salt for a sweet-and-salty twist.
Gift them! Pack in jars or bags with a ribbon for the ultimate homemade present.
