What Happens When Two Regenerative Brands Find Each Other

We're excited to introduce you to one of our newest ingredient partners.  PACHA is an organic, allergen-free bread brand based out of California, making buckwheat sourdough loaves, English muffins, and tortillas that are sold at Whole Foods (500+ locations), Sprouts, Natural Grocers, HEB, and Albertsons — and direct to consumers online.

They came to us looking for the best vanilla they could find for a limited special release: a Mulberry Vanilla buckwheat sourdough loaf dropping June 22. Their team had looked at other organic vanilla options. Then they found us — and what mattered to them wasn't just the organic certification. It was the ROC standard, and what it actually means for farmers, soil, and the supply chain.

Why PACHA Chose ROC Vanilla

PACHA's co-founder Adam Hiner built the brand during COVID on a simple premise: make bread that anyone can eat, from ingredients that don't cost the planet to produce. Their buckwheat is Verified Regenerative Organic, certified by the Soil and Climate Initiative. Their packaging is home-compostable. They are, in a word, picky about their sourcing.

When PACHA's procurement team reached out, they were specifically looking for a vanilla that matched the regenerative standard they hold for their other ingredients. Vanilla Bean Project's ROC certification — the only one of its kind in the world for pure vanilla extract — was exactly what they needed.

About the Bread

PACHA's Mulberry Vanilla loaf is built on their original buckwheat sourdough base — long-fermented, gluten-free, vegan, and free of the top 9 allergens. It's made with two primary ingredients and a slow ferment that makes the whole thing more digestible.

The flavor profile is warm and not at all sharp: vanilla leads, with ripe mulberry sweetness in the background. No tartness. It's the kind of thing that makes you want to toast a thick slice and take your time with breakfast.
