Stay Calm and Bake Banana Bread

Enjoy our family's favorite recipe for banana bread. Made better with our organic vanilla extract.

Banana bread with chocolate chips is my son’s favorite.

 When he was in high school, I would often bake a loaf after dinner, it would be gone by the next morning. With crumbs as the only evidence that the banana bread loaf was once there.

The smell of banana bread baking is one of the best smells in the world. There is something about it that is so comforting. We think our Organic Vanilla Extract makes it extra delicious.

A few years ago, my kids wanted to try being vegan. We tried a month-long experiment in veganism. This recipe is one of the best things that came out of that experience.

This recipe is vegan. Even now when we are not vegan. It is still our favorite banana bread recipe. This recipe is from Connoisseurus Veg and it is awesome. It is sure to be a favorite with your family too. It uses one bowl, and you can mix it up in less than ten minutes. I also like that I don't have to get out the mixer. You can mix it by hand with a spoon. You will notice that the texture is more loaf-like and less cake-like.

It is so easy that I know the recipe from heart.

It may be true that banana bread is just an excuse to enjoy chocolate chips. Especially when the chocolate is warm and melty when the bread is fresh out of the oven. My son's favorite way to eat banana bread is topped with almond butter.

Our Favorite Banana Bread

3 bananas

2/3 cup sugar (white or brown sugar both work)

1/3 vegetable oil

2 tsp Vanilla Bean Project Organic Extract (I always double the vanilla in recipes but that is optional)

I tsp cinnamon

2 cups flour

1 tsp baking soda

1 tsp salt

1 cup chocolate chips or walnuts

1 banana to slice thinly on top (Also optional)

Preheat oven to 375 degrees. Spray non-stick spray on a loaf pan.

 

Mash bananas. Add sugar, oil, and vanilla extract and mix. Add flour, baking soda, and salt to the bowl. The dough is a little thick. Mix well and then add chocolate chips.

 

Pour batter into a greased pan. (Optional: slice a banana thinly lengthwise and place on top of the banana bread)

 

Bake for 50 minutes. Let sit in the pan for 10 minutes then cool on the baking rack.
